If you just spawned in the area, it’ll take a bit for the eggs to appear.

I’ve noticed that with the rabbits too. Once I settle on an area, I do a run around so things start moving.

Rabbits, duck eggs, cactus fruit all need to be activated by being on a players screen or the tile needs to be loaded if you will. Personally I use this mechanic to find nearby villages. If you see family rabbits or fruiting cactus you can be 100% sure that you are not the first person to be there.
